Best Easter Brunch Recipe for a Couple

 

Easter has always been one of my favorite holidays, and I’ve always enjoyed cooking something special as part of the celebration.  When I was a kid, after sunrise service I’d make refrigerated biscuits cut into the shape of a bunny, and a parfait with canned fruit cocktail topped with cornflakes.  Don’t worry – those recipes were “lost” long ago, but at the time I thought it was pretty fancy!

Thankfully my tastes and culinary skills have evolved, but I still enjoy preparing festive dishes for the occasion.  If you stay with us on Easter, there’s a good chance breakfast at Tiffany’s could include this dish:

Carrot Cake Waffles with Maple Cream Drizzle

Waffles: 

2 cups all-purpose baking mix

3 T ground cinnamon

1/4 cup brown sugar

1 cup milk

2 T vegetable oil

1 large egg

1/2 cup chopped pecans

1/2 cup raisins

1 cup grated carrot

Maple Cream Drizzle:

8 oz cream cheese

1 cup maple syrup

Heat waffle iron.  In a large bowl, combine baking mix, cinnamon and brown sugar.  Whisk in milk, oil and egg until fully incorporated.  Fold in pecans, raisins and carrot.

For each waffle, coat waffle iron with nonstick spray.   Ladle 1/2 cup of batter onto iron for each waffle.  Cook 6-8 minutes, or until waffle is golden brown.

To make drizzle:  Using electric mixer, beat cream cheese and syrup until fully incorporated.  Drizzle over waffles.  Serve immediately.

This recipe makes 8 servings, but you can wrap the leftover waffles in plastic wrap, place in a resealable bag, and freeze.  Reheat the frozen waffles in a toaster for a quick weekday breakfast.

To make your Easter brunch even more festive, try this fun bunny napkin fold:colorful napkin wrapped around a green egg and tied with a ribbon to look like bunny ears

  1. Fold a large cloth napkin into a triangle
  2. Starting at the point, roll the napkin into a rope, about an inch thick
  3. Bend the napkin in half, and place a hard boiled or plastic egg in the bottom center
  4. Tie the two sides of the napkin together, just above the egg, creating the ears
