Breakfast Grits

Before our guests head out to explore Hot Springs National Park, they are treated to Breakfast at Tiffany’s each morning.  Today I was asked to share one of our favorite recipes.  Before you see the word “grits” and turn your nose up, I must warn you that you may be avoiding a delicious surprise!  There are so many goodies mixed in, that most guests who claim to not like grits LOVE this dish!

Grits, Sausage and Egg Casserole

4 cups water
1 teaspoon salt
1 cup quick-cooking grits
4 eggs, lightly beaten
1 pound pork sausage, browned and drained
1 1/2 cups (6 oz) shredded cheddar cheese, divided
1/2 cup milk
1/4 cup butter or margarine, softened

In a large saucepan, bring water and salt to a boil.  Slowly stir in grits.  Reduce heat and cook 4-5 minutes, stirring occasionally.
Remove grits from heat and add a small amount of hot grits into the eggs; add grits/egg mixture back into the saucepan.  Stir in sausage, 1 cup cheese, milk and butter; stir until butter is melted.
Pour into 6 greased ramekins.  Sprinkle with remaining cheese.  Bake at 350 degrees for 50-55 minutes or until the top begins to brown.

Being the early riser that I am (NOT!), I prepare this dish the night before, without the cheese on top, and refrigerate overnight.  The next morning, bake for 30 minutes, and then sprinkle the cheese on top and continue baking until the cheese begins to brown.
