Most of our guests take at least one hike during their stay at Tiffany’s, while many of them plan their whole trip around hiking Hot Springs National Park or one of the state parks in our area. Other guests stay active riding our world class mountain biking trails, or swimming in one of the 4 lakes surrounding us. Whatever way you choose to stay active during your visit, chances are you’ll want a snack or pick-me-up at some point in your adventure.
My mom gave me this recipe several years ago. As I often do, I filed it away and never made it. Recently I came across it and decided to try it out on our guests. There is a LOT of energy packed into these little bars, so have a plan to be very active after you make them (i.e. don’t feed them to the kids right before bedtime)!
1 c. dried cranberries
2 T. sugar
2 c. all purpose flour
1/2 t. baking soda
2 c. old fashioned oats
1/2 c. sugar
1/2 c. brown sugar
1 c. melted unsalted butter
1 1/4 c. dried dates, chopped
3/4 c. pecans, chopped
1 1/2 c. caramel sauce
Preheat oven to 350° F. Lightly grease a 13-9″ baking pan.
Mix together cranberries and sugar. Set aside.
Combine flour, baking soda, oats, sugar and brown sugar in mixing bowl.
Add melted butter and mix until crumble-like texture. Reserve 2 cups of this for the topping.
Press the flour-oats mixture onto the bottom of the baking pan and back at 350° for 15 minutes.
Sprinkle the cranberry-sugar mix, dates and pecans over the baked bottom.
Pour caramel over the top.
Take the 1 cup reserved topping mix and place over the filling. Bake for 20 minutes or until golden brown.
Let cool before cutting. Yields 24 bars.
